As the baby-boomer generation aged, I became interested in flavors that might appeal to seniors.  It turns out that as people age they lose taste sensitivity to almost all flavors except, surprisingly, green pepper. Naturally I settled on Cabernet Sauvignon. But then I decided that all great wines, like great drama, should appeal to all people, So I added a Chardonnay in a racy, acid, minimal-oak style.
